This experience fits under the creativity strand. I aspired to extend the idea of vegan baking. This time, the starch ingredient is replaced by bananas. There are also no eggs in the recipe, (replaced by chia seeds). This recipe was inspired by the fitness influencers on YouTube and dietitians on Instagram. However, most of them used up actual eggs. From the last CAS experience, I learned how chia seeds can replace eggs in baking. Thus, I had the idea to experiment using chia eggs in my banana pancake.
The result is even more successful than last time. I found out how banana is an excellent ingredient for filling up sweetness and thickening the texture in the recipe. It adds a natural sweet flavor and aurora and gives the pancake a soft and creamy texture.
From this experience, I realized how easy it is to do a vegan recipe. In fact, I gathered all ingredients from my house. Before, vegan food was distant to me because in Taiwan, the idea has not been spread and recognized yet. However, recently, the vegan concept has started to gain awareness due to various marketing of industries. For instance, Starbucks provides soy milk and oat milk for customization, 7-11 started Oatly in bottles and Oatly Latte with their City Café, and Family mart also incorporates more vegan products in their stores, including sweets and savory.
From all these phenomenons, I realized how the society is altering and transforming into a new concept. People pay more attention to their health and are more conscious with the issue of global warming. As part of the community, I feel responsible to share that duty of taking care of our planets. I truly appreciated how veganism had started to gain awareness and even the markets adapt it with positivity.
